A shrub is essentially a vinegar that is infused with fruit and sweetened. Herbs are always fun to add!
Ingredients:
Frozen Cranberries
Fresh Rosemary
Apple Cider Vinegar
Honey
Glass jar with a non-metal food-safe lid (or a metal lid and unbleached parchment paper for a barrier)
Directions:
1. Pasteurize your vinegar by bringing it to a boil in a non-metal pot, remove from heat, and cool back to room temp.
2. Chop the frozen cranberries with a knife and cut the rosemary with scissors, both into small pieces. The smaller the better.
4. Layer the cranberries and rosemary in the jar to almost fill the jar, lightly packed.
5. Pour the vinegar into the jar, to fill about 2/3 of the way.
6. Fill the rest of the jar with honey. If your honey has solidified, that is OK. In time it will meld with the vinegar and become one.
7. You can also stir them together, if it is not too messy to do so.
8. Cover with a non-reactive lid. Vinegar will rust metal.
9. Let macerate/steep for 4-6 weeks away from direct sunlight. Shake as you see fit.
10. Strain the shrub from the plant material. It should be shelf stable, but you can also keep it in the fridge to ensure lasting stability.
11. Enjoy by the spoonful or by mixing into beverages.
